Wake and Bake Cannabis Pancakes can be made with either cannamilk or yogurt whey. The fluffy, soft pancakes are delicious with any toppings. Enjoy them as meals, snacks or desserts.
INGREDIENTS
The ingredients in Wake and Bake Cannabis Pancakes are simple.
1 1/3 cup all-purpose flour
3 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 egg, slightly beaten
1 1/3 cups cannamilk or cannawhey
3 Tbsp melted butter or oil (use cannabutter or cannaoil if desired)
1/4 tsp vanilla extract
HOW TO MAKE CANNAMILK
If you don’t have cannamilk on hand for your cannabis pancakes, you can easily make some.
Break cannabis into small pieces. Decarboxylate cannabis in the oven at 240° for 25 to 30 minutes.
Heat milk in a double boiler on medium heat or in a heavy pot on low to medium-low heat. Add decarboxylated cannabis. Heat until milk reaches 180°F and hold that temperature for 30 to 45 minutes, stirring frequently.
Pour through a fine strainer or strainer lined with cheesecloth. Press on the cannabis with the back of a spoon to remove all of the liquid. Let cannamilk cool to room temperature. Use in cannabis pancakes recipe or refrigerate for later use.
CANNABIS WHEY
Using yogurt whey in cannabis pancakes results in a unique potty, tart flavor similar to sourdough. Since THC is soluble in fat, cannabis whey probably won’t get you high. However, terpenes and flavonoids are captured in the whey. These healthy compounds give whey pancakes their distinctive flavor.
Add melted cannabutter or cannaoil to the recipe if you want the full effects of cannabis pancakes when using whey in the recipe.
HOW TO MAKE CANNABIS PANCAKES
In a mixing bowl, combine flour, sugar, baking powder and salt. Make a well in the center of the bowl.
In another mixing bowl combine slightly beaten egg, cannamilk or whey, oil, vanilla. Add ingredients to the well in the bowl of dry ingredients.
Mix together only until incorporated and batter is slightly lumpy. Over-mixing causes flat and chewy cannabis pancakes due to the development of gluten.
Using 1/3 cup batter for each cannabis pancake, pour into greased and preheated non-stick pan on medium heat. When bubbles form and pop, check to see that the pancake is nicely browned, then flip. When the other side is nicely browned, remove pancakes from pan.
